The James Beard Foundation holds a summer annual tasting party at the spectacular vineyards of Wölffer Estate Vineyard. Over 40 talented chefs participated in this event. To rock the socks off of the guests, we created a spit-fired roasted Wild Boar Bohn Mi Sandwich with charred bread, ‘Nduja mayonnaise, cucumbers, radishes, cilantro and mint. It was off the hook!

Need an idea for dinner this week? Our NJ raised Berkshire Pork Tenderloins are tender, juicy, and delicious. Season with a dry rub, BBQ sauce, or fresh herbs and cook on the grill at medium heat approximately 12-15 minutes, until medium or medium rare. Slice and serve over a mixed green salad. Or create a summer stir fry. Season the tenderloin with salt, pepper and herbs, pull some produce from the garden, and cut into small pieces  for a quick and scrumptious dinner.  Need more inspiration? Doug's Golf Trip

One of my close friends is getting married. At our age the idea of a bachelor party was a long golf weekend in Ocean City, Maryland. So 11 of us rented a house by the beach and headed down. When renting a house, you need to stock it. I volunteered to bring food. I brought 10 lbs. of our All-Natural Angus Beef Skirt Steak and a few Camel Burgers. The Skirt Steak was marinated for 24 hours in olive oil, soy, balsamic vinegar, garlic cloves and fresh thyme, and grilled to rare. The end result was me being told I had ruined steak forever for everyone because they were certain to never have a better piece of meat. As for the Camel, many were reluctant to try it. I said anybody can go to Ocean City, Maryland, play golf with their buddies and tell stories when they get home.
