We collaborate with a 75-acre family-owned farm that have been raising Cavendish Quail in Vermont for over 25 years. This particular type of bird was selectively bred in order to provide a finished product that is known for its meatiness and natural tenderness. Cavendish Quail are fed a diet of corn, wheat, barley, and soybean meal. The result is a bird that is high in protein, and slightly sweet with a well-developed finish and streaks of subcutaneous fat that enhance the flavor and keep the meat moist while cooking.

These all dark meat birds have a slight sweet delicate texture that is low in cholesterol and high in amino acids.

Our Quail are 100% hormone and antibiotic free, referred to as a “Never-Ever” program. These birds have never been administered hormones or antibiotics.
