Alligator Tenderloin meat is white in color and tastes similar to chicken.  Alligator's mild flavor profile can be used in a variety of applications, and a firm texture that can vary depending on how its prepared.  Alligator tenderloin is the perfect meat for marinating, and there are many ways to cook it.  Some of the preferred techniques are grilling or breading and frying. Most recipes call for Cajun style, but capers, butter and lemon create another delicious, complimentary flavor profile.

Alligator Tenderloins are a great addition to a traditional gumbo recipe as well! We prefer to poach the tenderloins, and let them cool, then shred the meat by hand.  Once the gumbo is done simmering, we add the meat back in.  Another bonus about this meat is that it's not only tasty and versatile, but virtually fat free and high in protein. You can feel good about enjoying your meal as well!

Our Alligator Tenderloins come from the tail, and are sourced from sustainable farms in Louisiana. There, the animals are well-cared for and fed a lean, high protein diet.

Fossil Farms Blackened Alligator Salad

Ingredients

1 T cayenne pepper
1 T black pepper
1 T plus ½ tsp. white pepper
6 Pieces Fossil Farms Alligator meat, 6 to 8 ounces each
1 ¼ Cups peanut oil
3 heads romaine lettuce, chopped
2 each scallion, chopped fine
3 Heads Belgian endive, sliced diagonally
1 ½ tsp. salt
1 cup Worcestershire sauce
1 ¼ cups red wine
1 T vegetable oil
1 ¼ cup chopped pecans

Directions

In a small bowl, combine the cayenne, black pepper, 1 tablespoon of the white pepper, and half teaspoon of the salt (or less according to taste.)  Set the seasoning mixture aside.

Place the Alligator meat in a shallow dish and pour the Worcestershire sauce over the meat.  Marinate the Alligator for 30 minutes in the refrigerator, turning the meat several times.

In a medium bowl, combine the peanut oil and vinegar with the remaining ½ teaspoon of white pepper and 1 teaspoon salt.  Whisk until well blended, then set the dressing aside.  Preheat oven to 350° F.  Spread the pecans in a single layer on a rimmed baking sheet and roast in the hot oven about 8 minutes.  Let cool.

Sprinkle the marinated Alligator on both sides with the seasoning mixture.  Coat a large cast iron skillet with the oil and heat until almost smoking.  Place the Alligator in the hot skillet and sear about 2 minutes per side.  Remove from the skillet and break or cut into bite size pieces.

In a large bowl, combine the romaine, scallions, endive and blackened Alligator.  Add dressing as desired and gently mix until the ingredients are well coated. Plate salad, then blackened Alligator and garnish with roasted pecans.

Gator bites!

My wife had never tried alligator before so I ordered up a 1Lb package to use for Super Bowl Sunday festivities to see how she liked it. I cut them up into roughly 1 inch pieces, dredged them in flour, egg wash and a seasoned panko style bread crumbs and fried them up for a couple of minutes each in a cast iron skillet with a little olive oil.

The results where fantastic. My wife was very happily surprised by how it tasted and she's now a confirmed 'gator lover.

1 pound was the perfect size since we had a number of other things included in the spread too. There were leftovers of everything...except the 'gator!

I plan to order some more as this has now entered our regular dinner rotation.

It cooks up relatively easily, but be careful to over cook or over season!

Alligator has a subtle flavor and is more tender than you’d expect. I think most Fossil Farm game meats are marinated as part of their prep. Whoever does their prep needs to lay off the salt a bit!
