The elk medallions were the most tender and flavorful pieces of elk I've ever had. I will be ordering these again and again.
Lots of power in a compact piece of meat. Sauteed mushrooms first in a cast iron skillet in butter and oil with a splash of cabernet sauvignon then removed. Gave the medallions an olive oil rub, seared in the same skillet with butter a few minutes each side. When done, lowered the flame, added a splash of worcestershire, cooked that off then added the mushrooms again for a few minutes.....medium rare, tender, juicy and perfect!

I ordered to sets of the elk. The first was tough, so I let Fossil farms know. They were promptt with reply and suggested a different cooking method. I tried that on the second set but still tough.
They did not come frozen, so I had to prepare them before I had planned on the weekend . I ate one that day and shared the others on Saturday. I had no way to check the package for the temperature suggested. So for the expensive shipping charge ; which will way my decision I can not afford to order again; I took a chance on cooking and eating, which seem not to alter the taste. The fresh cooked was definitely a better chew and taste than the warm over ones. I would recommend to have a thermometer before ordering any frozen meet, and track the package more closely than I did.
