Domestic Lamb

On family owned farms high in the Rocky Mountains of Colorado, our lamb live life the way nature intended. Naturally grazing on native grass, roughage and grains make this lamb high in protein, high in iron and low in cholesterol. They are raised to the specifications of the “Never Ever Program”, where antibiotics, hormones and steroids are never administered. You Wool not believe how good they taste until you try some! With a clean flavor, these lamb do not have a gamey taste.

  • Lamb Burgers

    2 each (8oz patty)
    Lamb Burgers
    Made from free range Lamb, these burgers are not gamey. We never add anything into our ground Lamb, just pure meat. Our Ground Lamb blend is 80% lean and has a 20% fat content. Grill to medium rare and top your burger off with a yogurt, cucumber and dill sauce.


    Grilled Lamb Burgers with Harissa Yogurt

    Here is an easy summer recipe featuring Fossil Farms lamb burgers using classic flavor combinations from the Mediterranean.

    4 ea. Fossil Farms 8 oz. Lamb Burgers
    1 tbsp. Za'tar seasoning
    8 oz. Goat's milk or Greek yogurt
    1 tbsp. harissa paste
    2 tbsp. fresh mint, chopped
    Juice 1⁄2 lemon
    1 ea. hot house cucumber, sliced thin
    Kosher salt

    1. Preheat your grill for direct grilling.
    2. Make yogurt by mixing yogurt with harissa paste, mint, salt and lemon juice.
    3. Toss cucumbers with equal parts salt and sugar.
    4. Sprinkle lamb patties with Za’tar seasoning.
    5. Grill to desired doneness.
    6. Serve on your favorite rolls with harissa yogurt, thin sliced red onion, butter lettuce, feta cheese, and cured cucumbers.

    These lamb burgers are delicious! They have become a staple at our summer barbecues and are a hit with our guests. Top with sliced cucumber and tzatziki and they are so so good!
