My girlfriend loves duck confit and I promised it to her for her birthday. I did a lot of searching online and decided to try Fossil Farms. Janice Biscoe Delish and oh so tender. I use a chicken leg hanger, rub the legs with olive oil and seasoning and hang them on the hanger over a tray that has water in it and roast away. Fat falls down, skin crisps, and oh, the aroma! Great deal.
