We have had quite the makeover here at Fossil Farms, and are thrilled to show off our new website. We have had a jam packed summer and fall, filled with incredible industry events.
Back in January 2015, we collaborated with PF Films to create our first official company video. After hours of brainstorming, practicing, moving filming dates due to consecutive snowstorms, and editing, we are proud of the finished piece! Thanks to Peter Fierro and his wonderful team!
A day of scouting at Roaming Acres Farm / Visiting the Ostriches
Every year Fossil Farms Company Store & Retail Market, located next to our corporate office in Boonton, New Jersey, celebrates our store anniversary with an amazing store sampling. This year, our 4th anniversary, we welcomed chef Johnny McLaughlin from Heartbreaking Dawns. Johnny seasoned our Local Harvest Hanger Steak with one of his rubs and made kick-ass tacos accompanied by his sauces. We, also, invited the Scoop House to hand out sweet treats to our customers. In July, we were a sponsor of the James Beard Foundation’s Chefs and Champagne event at the Wölffer Estate Vineyard in Sagaponeck, NY. This is our 2nd appearance at this fantastic event and knocked attendees’ socks off with our dish of Bone-In Bison Ribeye with Pickled Chanterelles, Garlic Scape Pesto, and Crispy Duck Fat Fries.

We were grateful to be invited to participate in the first season of the John Becker Lincoln Park/Montville Farm to Table farmer’s market at the Towaco Train Station in Montville, NJ. It was wonderful to educate local New Jersey neighbors about Fossil Farms products and our mission.
In August, we hosted a Customer Appreciation BBQ for chefs throughout New York City and New Jersey at Roaming Acres Farm, owned by Todd Appelbaum, brother of our Founder and CEO Lance Appelbaum. Chefs were given a tour to see Berkshire Pigs, Ostriches, Emu and Bison being naturally raised in Sussex County, New Jersey. Videographer Amilcar Navarro was on hand to capture the scenery and festivities.The beautiful day ended with an incredible spread with a Pig roast, Duck burgers, vegetables, pies and chocolate dipped bacon for the trip home.

In September, we teamed up with Stella 34 Trattoria and chef Jarett Appell for an incredible 5 course producer dinner. It was a packed house of 80 guests and we look forward to collaborating with them again!

We partnered with Winston Industries to create a truly memorable dining experience with NY chef Florian Wehrli/Triomphe Restaurant and Louisville, Kentucky chefs including Jay Denham from Woodlands Pork, Annie Pettry/ Decca Restaurant, Patrick Roney/The Oakroom and Barry Yates/Director of Innovation at Winston Industries. Our incredible dream team collaboration garnished both companies the ‘Best Customer Experience’ Award from this event. We cannot wait to team up again next year!

We were pleased to find out that our Elk was featured on Paleo Kitchen Stories’ website, for a Braised Elk Short Ribs recipe! Dana Smith of the wife/husband team of Paleo Kitchens, came into our Retail Store and had asked us about different game meats, never revealing that she was going to use our product for a recipe on her site! Thanks Dana!
The James Beard Foundation hosted a ‘Wild About Game’ dinner on November 2nd sponsored by Fossil Farms. Eight chefs were given the opportunity to choose proteins from our product list, or as we like to call it, the ‘candy store for chefs’. Each chef created an appetizer and entrée for an unbelievable 8 course dinner. Chefs included: Ben Del Coro/Fossil Farms, Seth Reaback/Fossil Farms, Ken Hoerle/Fossil Farms, Florian Wehrli/Triomphe, Jarrett Appell/Stella 34 Trattoria, Jason DeBriere/Tacombi Restaurants, Bryan Hunt/Riverpark NY, and Michael Langdon/Glenmaura National Golf Club. Already looking forward to another delicious event next year!
