I scrambled an Emu egg with bacon bits and we had the best croissant breakfast sandwiches ever. The shell was easy to crack with a few gentle taps with a hammer and screwdriver. The contents has a thick gelled texture; however it cooks up like a chicken egg. We found it to be a lot tastier. You have to keep a look out, as they are not in season long. I highly recommend Fossil Farms for their high quality eggs, and fast efficient service.
