Wild Boar Osso Buco

It was the first time I have ordered and cooked Wild Boar meat. I cooked it up, in the crockpot on low, with onions, garlic, 1 carrot per person, bay leaves, whole cloves, brown gravy, half a bottle of red wine, salt and pepper and a handful of (believe it or not) dried soup veggies. 30 Minutes before it was done I added some medium noodles.(Total cooktime 8hrs) The meat was super tender, fall of the bone and the tendons, cartilage just melted. The family loved it! Highly recommend!

VERY unimpressive

I cook 3 times a day and usually when I make this cut I use veal and it is fantastic. This wild boar was seemingly a cut right through the knee joint. In fact I never even ate it. There was nothing to eat. It was all bone and gristle and just tasted like shitty pork fat and I threw it away. I was very surprised and disappointed and will never make that mistake again. I actually stopped purchasing anything as a result. I paid good money for it. It was a total waste and a major turn off.
