This is possibly the most tender game meat you will ever find. To learn its flavor profile, I just added salt and pepper and brushed the medallions with olive oil before cooking them medium-rare in a cast-iron grill pan. I found the flavor to be neutral--no gamy taste at all. In my opinion, this versatile red meat cries out for flavor enhancement: Marinate it and enjoy it in a souvlaki; feature it in a paprikash; create your own 'Roo Stew; or, try hot-smoking it over fruitwood and slicing it up like London Broil.
