Excellent smoked

Kept it simple with some salt and pepper a few hours before cooking. 3 hours at 225 with a mix of oak and cherry wood. Kept a water pan underbeath for moisture. Wrapped in foil with some butter for 2 more hours. Unwrapped and meat temperature was about 205. Let rest for 10 minutes. Came out very tender and not dry at all. Will definitely do these again.

The best game meat,not even Bison comes close.I’m in love with bison,but elk is second to none.Definitely buying the Denver leg again.
