𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 1 ea. Fossil Farms Angus Brisket ¾ gallon water 1½ cups kosher salt ½ cup coconut palm sugar, or honey 3-5 ea. bay leaves, torn 1 tbsp. peppercorns 1 tbsp. juniper berries 1 tbsp. coriander seeds 1 tbsp. allspice berries 1 tsp. mustard seeds 1 tsp. ground ginger 1 ea. cinnamon stick, broken into pieces 1 lb. potatoes, peeled and quartered . 𝐂𝐨𝐨𝐤𝐢𝐧𝐠 𝐭𝐡𝐞 𝐛𝐫𝐢𝐬𝐤𝐞𝐭 2 ea. onions, peeled and chopped 2-3 ea. carrots, peeled and diced 1 ea. head green cabbage, chopped . 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧 Trim any excess fat from the brisket and set aside. In a large pot, combine all of the ingredients over medium heat until the salt has dissolved. Let cool. When the brine reaches room temperature, place brisket meat into the liquid. Place a heavy plate and weight on top of the meat to keep it fully submerged. Cover and refrigerate for 4 days. Set the oven to 325F. Remove the brisket from the brine and rinse with cold water. In a baking pan, place the brisket over potatoes, carrots and cabbage. Add water until half of the pan is full. Cover tightly with aluminum foil and put in the preheated oven. Bake in the oven at 325F for about 3 hours. When the brisket is fork tender, remove for slicing. Slice the corned brisket across the grain to your desired thickness. Strain the vegetables and serve.
