Ingredients 1 package Fossil Farms’ Wild Boar & Garlic Sausage, casing removed Pastry for single-crust pie (9 inches) 1 ea. small onion, chopped 1 ea. bunch of spinach, sautéed, water removed, and chopped 1 cup Goat cheese, crumbled 4 ea. eggs, large 1 cup heavy whipping cream 1 tbsp. fresh parsley, chopped Salt and pepper . Preparation Preheat oven to 450°. Roll out pastry to fit a 9-in. fluted pie plate. Transfer pastry to pie plate. Trim pastry to half inch beyond edge of plate; flute edges. Line un-pricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights. Bake 8 minutes. Remove foil and weights; bake 5 minutes longer. Cool on a wire rack. Reduce oven temperature to 375°. While pie crust is cooking, heat a large skillet over medium heat. Brown sausage until cooked through. Remove from pan and drain. Sauté onion until translucent and mix in the spinach, sausage and parsley. Season mixture with salt and pepper. Spoon into shell and sprinkle with cheese. In a large bowl, whisk remaining ingredients. Bake 35-40 minutes or until a knife inserted in center comes out clean. Let stand 10 minutes before cutting.
