Marinated in red wine and a little Italian dressing and grilled. Hubby who is not a game meat fan couldn’t tell. Super tender

The elk medallions were the most tender and flavorful pieces of elk I've ever had. I will be ordering these again and again.
Lots of power in a compact piece of meat. Sauteed mushrooms first in a cast iron skillet in butter and oil with a splash of cabernet sauvignon then removed. Gave the medallions an olive oil rub, seared in the same skillet with butter a few minutes each side. When done, lowered the flame, added a splash of worcestershire, cooked that off then added the mushrooms again for a few minutes.....medium rare, tender, juicy and perfect!
