Our family-owned farm partners in Vermont and Texas have been raising Quail for many years. These particular types of birds, Coturnix Quail (VT) and Texas Prime Quail (TX), are bred in order to provide a finished product that is known for its meatiness and natural tenderness. Fossil Farm's Quail are 100% all-natural and part of the “Never Ever Program”, where antibiotics, hormones and steroids are never used. These free-roaming Quail eat a diet of corn, wheat, barley, and soybean meal. The result is a meaty bird that is high in protein and slightly sweet, with a well-developed finish. Both Farms use vertical integration, which means they are fully sustainable from growing the food, hatching and finally processed by hand, not mechanically.
