Barbarie Ducks are also known as Orvia ducks. They are grown in Sullivan County, NY, in open air arena style coops. This gives them plenty of room to exercise and move about, directly resulting in great flavor and tenderness. The Barbarie Duck's distinct flavor is modestly rich and it has a thinner fat cap.
The ducks are air cooled at the time of processing which makes the skin very crispy when cooked. All of our Ducks are 100% naturally raised and are part of the "Never Ever Program," where antibiotics, steroids and hormones are never used.
This duck is wonderful for trying out your favorite roast duck recipe on, or a new twist. After roasting, you can cool and reserve the rendered duck fat. This fat has a long shelf life in the refrigerator. Then, get creative! You can use the fat to cook potatoes, veggies, eggs, or anything else you'd use oil for!
