A Poussin, also known as a spring chicken, is a young, small chicken prized for its tender texture and delicate flavor. Because it is harvested at a young age, even the leg and thigh meat is lighter and more delicate than that of a mature chicken. With an average weight around 1 lb., these birds are perfect for grilling, smoking, or roasting in the oven.

Our Poussin are perfect for a mid-week dinner because they are so lean and cook very quickly. When cooking, make sure to baste often to keep the meat juicy.

Fossil Farms’ free roaming Chickens are raised in open barns with no restriction to range and are never held in cages. Our family owned and operated farm partners raise our 100% all natural Chickens in New Jersey and Pennsylvania. They do their own breeding, hatching, growing, transportation, and processing to ensure that their livestock is humanely raised and processed.

Part of the “Never Ever Program,” our Chickens are never given hormones, antibiotics, or steroids. The livestock are never fed any animal byproducts and are only given premium vegetarian feed sourced from local farms.
