We work directly with reptile wranglers throughout the Southwestern United States. Our Rattlesnakes are skinned, cleaned and portioned, so that all you have to do is marinate and cook. If you prefer boneless Rattlesnake, remove the pin bones from the meat by placing the Rattlesnake in simmering water, with a touch of lemon juice, for 40 -60 minutes. When cooking the Rattlesnake, cook like calamari, high temperature – quick cooking time (fry), or cook low and slow (braise). Rattlesnake tastes similar to chicken, fish and alligator.
