Spaghetti with Bison Bolognese

Ingredients:
Bolognese Sauce:
1 pkg. Fossil Farms' Bison GroundΒ Meat, 1 lb.
2 tbsp. olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 medium carrot, finely chopped
1 celery stalk, finely chopped
ΒΌ cup dry red wine
1 can (14 oz) crushed tomatoes
Β½ cup whole milk or heavy cream
ΒΌ tsp. dried oregano
ΒΌ tsp. dried basil
ΒΌ tsp. red pepper flakes (optional)
Salt and pepper to taste
Spaghetti:
12 oz Spaghetti (or preferred pasta)
Optional:Β Freshly grated Parmesan cheese
Fresh Basil
Equipment:
Measuring cups and spoons
Stove
Large skillet or sautΓ© pan
Large pot (for boiling pasta)
Strainer
Wooden spoon or spatula
Cutting board and knife

Method:
Prepare the Bolognese Sauce:
1. Heat 2 tablespoons of olive oil in a large skillet or sautΓ© pan over medium heat.
2. Add the chopped onion and sautΓ© for 3β4 minutes until softened.
3. Add the garlic, carrot, and celery, and cook for another 5β6 minutes, stirring occasionally until the vegetablesΒ are tender.
4. Add the ground Bison meat, breaking it up with a wooden spoon. Cook until browned all over, about 6β8Β minutes.
5. Pour in the red wine and let it simmer for 2β3 minutes, allowing the alcohol to cook off and the flavors toΒ meld.
6. Stir in the crushed tomatoes, milk or cream, oregano, basil, red pepper flakes (if using), and salt and pepperΒ to taste.
7. Reduce the heat to low, and let the sauce simmer for 30β40 minutes, stirring occasionally, until it thickensΒ and the flavors develop. Adjust seasoning as needed.
Cook the Spaghetti:
8. While the sauce is simmering, bring a large pot of salted water to a boil.
9. Add the spaghetti and cook according to the package instructions, typically about 8β10 minutes, untilΒ al dente.
10. Reserve a small cup of pasta water, then drain the pasta in a strainer and set aside.
Assemble the Dish:
11. Once the sauce is ready, toss the cooked spaghetti directly into the pan with the Bolognese sauce.
12. Stir to coat the pasta evenly with the sauce. If the sauce is too thick, add a small amount of the reservedΒ pasta water to loosen it.
13. Serve immediately, topped with freshly grated Parmesan cheese and a sprinkle of fresh basil if desired. Enjoy!Β
