Grassfed Wagyu Beef Coulotte, also known as Picanha, is a flavorful cut from the top of the sirloin cap. Sourced from New Zealand, this cut combines the marbling characteristics of Wagyu cattle with grass-fed farming practices.
The coulotte features a thick fat cap on one side that bastes the meat during cooking, creating a rich, buttery texture. This cut is highly marbled throughout and offers bold, beefy flavor.
For best results, score the fat cap in a crosshatch pattern and grill fat-side down over high heat to render and crisp the fat. Then flip and cook to medium-rare (130-135Β°F internal temperature). Let rest for 5-10 minutes before slicing against the grain.
