Flank steak is a lean, flat cut from the abdominal muscles of the cow. This cut works well for grilling, broiling, or stir-frying. For best results, marinate the steak for several hours, then grill over high heat to medium-rare (130-135°F internal temperature). Let rest for 5-10 minutes, then slice thinly against the grain.
