This was both my first time cooking steak (unless Mahi Mahi counts), AND my first time making a bison steak. I used the pan-seared method for three of the four sirloin we bought. Three minutes searing on each side then baking for 20 minutes worked for me. Parents loved it. As for me, I think I prefer bison burgers over the steak, just a preference.
Of course beef and chicken are delicious, however the game meats sold by Fossil Farms are outstanding and a very special treat.
