Not as good as last batch

Red sore marks all over the duck lower half and the duck wasn't defeathered properly this time. I had to spend another 30 mins cleaning it

Very tasty duck!

I roasted the duck as per the standard instructions and it came out wonderful. Not too fatty, very nice flavor, and moist. Also ideal for making crispy duck with pancakes and hoisin sauce.

Christmas Duck

The duck came out perfect!

Tender + Lots of Fat

Quartered the duck up, have only used a breast and some of the fat for tallow so far. The meat was flavorful and the fat/skin over the breast crisped up nicely. I was able to render so much fat from this bird, will have tallow for weeks. Saving the bones for broth, and have a ton of bird left, resealed for future meals.
