Kangaroo Denver Leg meat comes from the animal's hind leg (bone not included). The silver-skin and fat have been removed, making this cut of meat extremely versatile. Kangaroo meat has more protein than other red meats, is rich in iron and vitamins and low in cholesterol. Makes an incredibly delectable and tender roast, or can be used for stir-fries, steaks, medallions and stew meat.

absolutely awesome!

Seasoned it, browned it on all sides and then in instant pot for 1 hour on high pressure with broth, seasonings of choice, carrot, celery and onion. Was fork tender, a taste similar to beef. Every one in the family liked it, which isn't always the case when trying something new.

Kangaroo Denver Leg offers multiple cooking options

The Denver leg was fantastic and great for grilling or smoking. In addition to smoking it on our Big Green Egg, we trimmed some of the pieces to make for more uniform thickness prior to grilling and used the resulting trimmings in a delicious stew. To ensure good table-experience, it is helpful to remove any remaining "silver skin" (thin silver membrane between muscle groups) prior to cooking. By taking this step, you will find the meat to be exceptionally tender. Be sure not to overcook it as it is a very lean meat. You will find many recipes with an Asian flavor pallet on line and ones that recommend coating it with oil prior to cooking , but we also enjoy it with a short red-wine marinade and then rubbed with garlic, oregano, and black pepper as you might a beef steak.
We enjoyed having Kangaroo when we visited Australia and are so very happy that we are able to obtain this from Fossil Farms. We had previously looked online and were not sure about some of the sites we found and so we contacted a company in Australia that we had used. They thankfully put us in contact with Fossil Farms! We have ordered from them online and had the opportunity to visit their fine store as well. This last shipment was a bit delayed due to import issues surrounding Covid-19; but their customer service was exceptionally helpful in keeping us informed and offering the option for us to modify our order. It was well worth the wait!
