Aussie meat

blown away by how good it was

Cooked the kangaroo loins to a nice rare to medium rare in my Sous vide with red wine, butter, salt and pepper, and rosemary.Then finished it with a quick sear on the stove. It was delicious. Even my friends who have less refined palettes than my palette were blown away by how good it was.

At our house we eat exotic meat on Thanksgiving and this year we were finally able to have Kangaroo. We did our kangaroo loin in a soy sauce and brown sugar marinade, then wrapped it in bacon strips to bake it. Very good. The meat is dense and had good flavor. It does not taste gamey and could be served to less adventurous people and they would try to figure out the source.
