Beware of Canadian bison meat

The meat is nothing special in the taste dept
I had previously ordered bison strip loin which came from bison raised in middle America
And they were fantastic
Mitch the butcher recommended trying the ribeye which I did
Very unimpressed by the ribeyes from Canada
Don’t get me wrong. They are totally edible and do taste very very clean but even after getting a heavy dose of salt before cooking it up in a hot cast iron pan, it just did not have much taste.

OMG!!!!!

OMG!!! This item was "THE BOMB"!!!! Went over fantastically, even after the "ribbing" I got about the size of the ribeye! BOTH my guests were able to take some home & I've been getting "reports" from them that the ribeye was STILL as FANTASTIC as when it was originally served!! In fact, I even made-up meals for myself and have them in the freezer. I've had one of them, so far, and it tastes JUST as GOOD as the day it was originally cooked! SO TENDER, JUST LIKE THE DAY IT WAS COOKED!! Cooking this to mid-rare is THE BEST WAY to serve it! It was originally served, mid-rare, with mashed potatoes, beef gravy and corn on the cob!! A MUST HAVE!!!!! IF I COULD give this 10 stars, I WOULD! Fossil Farms, you've come through AGAIN!!!

Beyond expecations

Decided to make a change from Beef Prime Rib. Don't know if I can ever go back.
It was the perfect cut of meat to feed 12. Tender / Flavorful / Easy to cook
Everyone was so pleased - Thank you
