I seared all the sides on cast iron. Then tossed in the oven to get the correct internal temp (med rare).
Deglazed the pan and made a Dijon mustard sauce.

The medallions were great. The perfect size for a dinner portion. The meat is very favorable. Certainly will be ordering more of it.
Marinated in red wine and a little Italian dressing and grilled. Hubby who is not a game meat fan couldn’t tell. Super tender
