Elk Medallions, Bison Steaks

Ordered for Holidays - great phone support - Both meats were exactly as described (on phone and on website) and delicious! Meat came individually frozen with plenty of ice packs in a shipping cooler -meat was frozen solid after two days of travel. I will definitely order from Fossil Farms again in the near future!

Elk Medallions

Very smooth and silky texture to Elk, but considering the cost I'm probably better serving my tastebuds with a Flank or Chuck piece of Beef properly Sous Vided ( if that's a word). Wild boar was awesome in flavor, which I believe came in the same order, and was probably the best tasting pork I've sous vided to date in my 56 years of walking this side of the grass.

A little garlic powder, rosemary and Himalayan sea salt. That’s all it took to make this one of the best protein meals. Cooked medium at the most, seared to hold the flavor in. This is why I have stopped eating meat that is not from this naturally harvested process. This is how we are supposed to eat meat! Plus you don’t over eat this way!
