NZ Venison NY Strip Loin | 1.25 lb avg

Made Yager Schnitzel from the venison and was just awesome. It was the best I ever had and the meat was a big factor for that.

Cooked medium rare via sous vide and sear - absolutely delicious. We did a head-head tasting vs other meats (elk, bison, dry aged beef, and others): the venison won.

This venison has been fantastic, and it has been that way consistently. We have placed multiple orders, and we have been very happy with the product we received. My students are using it for a competition. The flavor and texture are outstanding. Very lean, but still very tender and flavorful.

Phenomenal cut and very tender

Cooked this strip loin sous vide to 130, then seared it and served it with a blueberry/blackberry/balsamic sauce. Excellent quality meat, great taste and texture, and sadly there were no leftovers.
