We roasted this Buddha style Guinea Hen with sliced Italian black summer truffle sliced thin and tucked under the skin over fingerling potatoes with onions and bacon and truffles. The hen was full flavored, moist, and delicious and the skin crisp, which lent a delightful flavor with the truffle.

This is an end of year treat for many in the Caribbean so I gifted the Guinea fowl to family and friends for the holidays and it did not disappoint. It’s moist and flavorful. Will gift this again to others.
Never had this particular bird before. However, my husband cooked it to perfection on the rotisserie and we both enjoyed its crisp skin and moist meat. Great meal and plenty leftover for another day, plus bones for soup!
I ordered an assortment of meats, pheasant and guinea hen. The Guinea Hen was much larger than I expected (which is great). So far everything has been delicious. I highly recommend Fossil Farms for exotic and game meats!
