It was delicious! I brined it over night in a rosemary bine, souse vide it for about 2 hours then pan sauteed to crisp the skin. It was wonderful.!
When I saw guinea hen on the site I quickly ordered as I remember when my grandmother would prepare this and how much I loved it. My husband had never had it and didn’t know what to expect. I roasted it sitting atop vegetables and potatoes with a little white wine and it was succulent and delicious!
