Cut from the leg and perfectly portioned, Kangaroo Medallions are very similar to a petite filet. Kangaroo tastes similar to Beef and Venison. No trimming will be necessary, as your yield will be 100%. Cook to medium-rare to keep the Kangaroo Medallions juicy and tender.

Kangaroo meat is high in protein and very low in fat. Kangaroo meat has a very high concentration of Conjugated Linoleic Acid when compared with other foods. CLA has been attributed with a wide range of health benefits including anti-carcinogenic and anti-diabetic properties, in addition to reducing obesity and atherosclerosis. Fossil Farms’ Kangaroo Medallions, while lean, are very tender and have a subtle gamey flavor.

Excellent cut of meat. Highly recommended

Fine for grilling after an hour or so of marinating in red wine, olive oil, lemon juice, and Italian seasoning. Very tender and just delicious. We grill to 140’ internal temp.

Marinated in terriyaki and soy with garlic for a day in the fridge, got them to room temperature and grilled 'em on high for 4+3 minutes on one side flipped and repeated 4+3...let 'em rest for 8 minutes and sliced into thin medallions. rich and tender.

I cut into small squares browned it and just threw in pot with taters rutabaga any kind vegetables you like.
