Elk Tenderloin is also known as the filet mignon cut.  We trim the Elk Tenderloin and it is ready to cook.  This cut is great when cooked whole on the grill, roasted in the oven, or portioned into filet mignon steaks. Our Elk is a part of the “Never Ever Program,” where antibiotics, steroids and hormones are never used.
