Our bison hanger steak is very tender and delicious. You will see a white connective tissue running down the center of the steak. You can easily remove this tissue by making a shallow "V" cut on either side of the connective tissue. This butchering will result in two nicely sized 8-10oz steaks. It is then ready to marinate, grill or roast.
