We couldn't be happier with this Bison tenderloin. Butchered I to tips for a sautée or maybe chili, and the rest into filets. Flash seared, then oven roasted low at 250 to am internal temp of 125. Ethereal tenderness that satisfies the red meat craving with very lean meat, and far more nutritional value than beef. Five stars for quality, and shipped as advertised.
Excellent, generous cut provided by the farm. Tenderloin prepared flawlessly and was just as savory in subsequent meals.
