The chicken was small and didn’t have any of the giblets. It was tasty.
After spatchcocking and an overnight salted rest in the fridge, I slathered an herb mayo under the skin and roasted it in the oven at 400f until the breast read 160f. I've never tasted poultry so heavenly in my life. It might be worth making the hike out to the farm to purchase though, as the shipping cost (and complications with UPS) were a bit prohibitive. End result: as a dedicated carnivore, the entire chicken was my one meal for the day. No leftovers. No regrets.
Live alone. Great dinner for 2 days. Roasts in like 2 hours at 350... on tray over some water. Makes a great gravy.
