Ostrich filets

Ostrich is fantastic especially when you sous vide them.
Can’t screw them up. Cook to temp and give them a quick sear.
Boat tenderloin is great as well!

Ostrich, why not?

Ostrich is the reason I first discovered fossil farms. Lean, no fat, cooks quick, should be served rare to medium rare. I serve it in a balsamic glaze. One of the many, healthy, high quality options at fossil farms.

The ostrich fillets were really good, but the other ostrich steaks were tough

have not cook them yet

some of the meat at the bottom was not Frozen ostrich Filets were OK The steaks were not Frozen I think thy are still OK Just to let you know.
