Great flavor, tender and juicy

I served these at a dinner party and they were a hit. I coated the outside with Dijon and coated with herbs and seasoning before searing in cast iron and finishing in a 400 degree oven for about 25 minutes until it reached 135 degrees internal. You could cut the meat with a butter knife it was so tender. Everyone loved them!
