Whole Moulard Duck

The birds arrived in great condition and well packaged to keep them cold. The only problem is that the packages of ground meat seemed to not be entirely sealed? Air makes its way in somewhere.

Nice big duck with plenty of healthy animal fat and tasty meat. I was happy that the tail was included on the carcass (my most favorite cut). I was disappointed that the following were not included: wing tips and middle segment of wings, neck skin, and standard offal giblets—heart, liver, and gizzard. Given that the wings are only partial (on both of the Moulard Ducks that I ordered and received), the product that is shipping does not match the photo of the whole, raw duck on the product page. Further, the whole, raw duck photo on the Moulard Duck page is the exact same photo as on the Peking Duck page—obviously, that should be corrected.

We had this duck as a special New Years Eve dinner. It was delicious, and could not have been more satisfied. We have had duck before, this surpassed our high expectations, in taste and in how well the company delivered our product.

Highly recommend anyone to do business with them.

This was my first try at cooking duck. I may have overcooked it but it came out tasting dry and tough. I got mixed suggestions on how long to cook it. If you have any suggestions I welcome them.
