Fantastic Twist to Pork for Our New Year's Day Tradition

These game ribs are very lean and healthful so do not need to be cooked too long. We scored them, used the well-regarded Black Smoke brand spices, smoked them over Carolina Hardwood on the Green Egg, sprayed them with a bit of red wine vinegar and fruit juice mixture at the end, applied a little butter and sage, wrapped them for just a bit, and enjoyed the feast with black-eyed peas and collards -- sure to be a lucky Year of the Tiger!

Has been great so far. We plan on cooking the elk soon and already had the wild boar. The service was just as advertised and we differently be ordering more. Thanks
