First time ever trying kangaroo. Even though they were burgers, I don't think I would necessarily put them on rolls the next time I had them. Cooking was quite easy. Put a cast skillet on high heat....then reduced it to medium heat. cooked the burgers on 4 and a half minutes per side and that seemed perfect. Before that I made an apple, celery and fennel slaw (found online) which came out quite well too. From there I just "experimented" and added some sweet Thai chili sauce and thinly sliced goat cheese (which I actually cut with a piece of unscented dental floss--which worked quite well) to them before eating. I could see if I cooked them any longer, they may have come out on the tough/chewy side. I think my timing was pretty spot on in terms of avoiding that. With the remaining burger that I had left, I made a small batch of mac-n-cheese and added the finely chopped remaining burger in with that which also came out pretty tasty. Again I decided to add some of the sweet chili sauce to that as well. I would absolutely buy these burgers again without hesitation. Thanks Fossil Farms for such a great product. Looking forward to trying some of the other game that I purchased along with the kangaroo.
