First time trying st.Louis ribs will be buying more
I am about to cook my 3rd package of them in a couple of days. I love them. My son, who lives with me, loves them. Cooking them is effortless. At only $4 more than the (uncooked) pork ribs available locally at the famous gourmet/health food store that often is out of stock, what's not to like?
Delicious but mine still came out a bit tough even after cooking 2-1/2 hours. However I used a dry rub and then a glaze. I think more of a braise type of recipe would work better to tenderize. I would definitely try them again.
At first sight I thought the ribs were small and lacking meat as I could only compare them to the typical processed pig ribs found in every local supermarket. But after thawing them out and prepping them for the grill my mouth began to water and I was way past any issues with the amount of meat as there was plenty. I smoked the ribs for 4 hours with just salt and pepper...Wow the taste was oddly but pleasantly sweet, These things are amazing we served them with baked homemade pinto beans with green chilies , sweet corn and whole green beans. Fit for a King! Glade I found Fossil Farms!
