As someone who cannot eat mammalian meat, being able to have a pastrami sandwich again was delightful, although significantly expensive.

Duck pastrami

Just defrosted. The spice is perfect a few raw bites are not salty at all. Fat is rendering at room temp. That’s Ok. Not sure how I’m going to prepare but I’m going to sautee in pan and serve with fontina cheese sahallots on a lightly toasted Briache bun with NY deli mustard. I truly think it will be incredible and will likely order again. Lots of possibilities.

The most sensuous of meats

I had never had Duck Pastrami before but it was GREAT! I thought there was to much pepper because I am a wuss, but the combination of the pepper and sweetness of the duck meat was just amazing! I want more.
