I usually eat ground bison, but I’ve ventured out to yak, elk, and venison—and of the 4, I’ve found yak to be my favorite! It has a more ‘delicate’ flavor than bison and none of the ‘gaminess’ I sometimes taste in elk and venison.

I eat mainly bison, along with venison, elk, yak—and a limited amount of beef. Long ago, I’d eaten some Piedmontese beef, and I’d forgotten how delicious it is. This steak was the best I’ve had in a very long time, and from now on, when I eat beef it will be Piedmontese.
